# The Fundamental Rules of Homemade Artisanal Gelato

## What happens in the freezer at −18 °C {#congelatore}

In a home freezer at −18 °C, pure water turns into a solid block of ice. Artisanal gelato remains soft and scoopable because only 60% to 75% of its water freezes into microcrystals; the rest stays liquid in a concentrated sugar syrup solution.

The secret of texture lies in the Anti-Freezing Power (PAC): sugars dissolved in water lower the freezing point. If the PAC is too low, the gelato turns rock-hard; if it is too high, it melts immediately at room temperature.

## 1. Water is the primary constraint (58–70%) {#acqua}

Water is the solvent for all ingredients. In milk-based gelato, water accounts for 58% to 64% of total weight; in fruit sorbets, it rises to 65%–72%.

All other solid components (sugars, fats, proteins, fibers) must counterbalance the water. If water exceeds 72%, ice crystals grow large and become noticeable on the palate.

## 2. Sugars: Balancing Sweetness (POD) and Anti-Freezing Power (PAC) {#zuccheri}

Sugars are not just sweeteners; they are essential structural agents.

• POD (Sweetening Power): indicates perceived sweetness relative to sucrose (set at 100). The typical target is 16–22.
• PAC (Anti-Freezing Power): measures how much the sugar depresses the freezing point (sucrose = 100, dextrose = 190). The typical target is 24–34.

By blending sucrose and dextrose (dextrose has high PAC, 190, and lower POD, 70), you achieve a soft, scoopable gelato without making it overly sweet.

## 3. Fats (6%–12%) and Non-Fat Milk Solids (MSNF 7%–11%) {#grassi}

Fats – cream, milk, egg yolk, nut pastes, cocoa – give gelato its creaminess, body, and slow down melting in the mouth.

Non-fat milk solids (MSNF / SLNG – proteins, lactose, and mineral salts) trap microscopic air bubbles. Do not exceed 11.5% MSNF, otherwise lactose crystallizes and the gelato turns sandy. This is why skimmed milk powder is so important: it preserves milk proteins while lowering the water percentage when needed.

A tip: skimmed milk powder dissolves best in cold milk (in warm milk it tends to clump); add it right away on its own, not mixed with other dry powders.

## 4. Stabilizers: Half a gram makes the difference (0.3%–0.5%) {#addensanti}

Natural stabilizers – locust bean gum, guar gum, pectin – bind free water and build a fine network that prevents ice crystals from expanding.

The typical dosage is 3 to 5 g per kilogram of mix (0.3%–0.5%): excessive amounts can make the gelato gummy and slimy.

A tip: stabilizer powder clumps very easily; pre-mix it thoroughly with dry sugars, and whisk the dry powders into the liquids once they have heated past 40 °C.

## 5. Pasteurization and aging (4–12 hours at 4 °C) {#pastorizzare}

Heat the mix to 82–85 °C: sugars dissolve completely, stabilizers hydrate and activate, and bacteria are eliminated (especially vital when using eggs).

Then let the mixture rest in the refrigerator at 4 °C for 4 to 12 hours. During aging, milk proteins fully hydrate and fats crystallize into ultra-fine globules.

## 6. Churning in home gelato makers {#gelatiera}

A good self-refrigerating gelato maker freezes the mix while continuously scraping the bowl walls for 20–35 minutes until reaching −5 °C to −7 °C. The faster the freezing process, the smaller the ice crystals will be.

## 7. Most common mistakes and how to fix them {#errori}

• Gelato too hard – Add 2–3% dextrose or reduce solids.
• Gelato melts immediately – Reduce dextrose, slightly increase total solids, or add a touch more stabilizer.
• Grainy or watery gelato – Ensure water does not exceed 72%, use more stabilizer, or speed up freezing.
• Sandy gelato – Too much milk powder (MSNF above 11%). Reduce the amount of skimmed milk powder.
