What happens if I omit skimmed milk powder from the recipe?

Skimmed milk powder provides dairy solids (proteins and lactose) without adding water. Omitting it increases free moisture, creating coarse ice crystals and an icy texture. The calculator helps compensate by adjusting other dairy liquids and fat ratios.

Can I use only table sugar (sucrose) if I don’t have dextrose?

Yes, but sucrose has a lower anti-freezing power than dextrose (PAC 100 vs 190). Using only sucrose makes gelato harder at −18 °C and overly sweet. Entering sucrose in the calculator will show you how to tweak liquid or fat ratios for ideal scoopability.

How do I substitute locust bean gum with other stabilizers?
