Artisanal High-Protein Chocolate Gelato

Recipe & formulation by TheRomanScoop

If you train frequently or follow a meal plan to reshape your body, this gelato is a sublime summer alternative to the standard protein shake. It delivers the same clean macros with the indulgent mouthfeel of a rich, velvety dark cocoa cream.

Whey protein (WPC 80%) provides the protein payload, but adding it to an ice cream churn can trigger a chemical trap. Its extreme hygroscopic nature, combined with the bitter cocoa solids, draws in available moisture and leaves the texture dry, chalky, or stiff.

The solution lies in mastering freezing chemistry. We balance the protein's thirst for water using a calibrated blend of dextrose and erythritol as targeted antifreeze agents, paired with gently activated locust bean gum. This keeps the matrix supple and scoopable.

The result is a deep, fudgy chocolate gelato that stays soft to the spoon at -18 °C, without any rubbery aftertaste.

Secrets of TheRomanScoop

Selection of Raw Ingredients

For an authentic and rich flavor, always use top-quality ingredients: high-grade fresh whole milk, fresh cream, and 100% pure nut pastes with no added sugars or vegetable oils.

Storage and Serving at −18 °C

Thanks to dextrose balancing (high PAC), this gelato remains wonderfully scoopable even in a home freezer. For the perfect velvety texture, remove it from the freezer 5–8 minutes before serving.
