Because the Anti-Freezing Power (PAC 27–35) is insufficient. Sugars lower the freezing point so gelato stays scoopable at −18 °C: if free water is too high and dextrose is missing, large ice crystals lock the structure solid.
Between 18% and 24% (180–240 g/kg) in milk/cream bases, and 26% to 34% in fruit sorbets. Combining sucrose and dextrose is essential to calibrate both sweetness and freezing point simultaneously.
Dextrose sweetens less than sucrose (POD 70) but has almost double freezing power (PAC 190). Skim milk powder adds solids and proteins (MSNF) without water. Stabilizers (locust bean gum, guar) bind free water (3–5 g/kg).
